CAMBRO prep crew in action. First the CAMBRO got a gallon of hot water for some minutes to preheat it, then that was dumped out, a plastic liner place in it and folded down and the lid placed on it. Now it is ready to be filled with hot food. Supposedly the CAMBRO only loses 3 degrees F per hour for food between 180 and 140 F.
